Healthy Arrowroot Fruit Custard Recipe

If you have a sweet tooth and wish to satisfy it with a healthy option, fruit custard is the perfect dessert for you. It is made by mixing seasonal fruits with chilled custard sauce, which is made from arrowroot powder. Now eating your favorite sweet without feeling guilt is so easy with this recipe.

  • 3 cups almond or soya milk/whole milk
  • 5 tablespoons arrowroot powder as custard powder
  • 1/2 cup sugar
  • 4 egg yolks
  • 1 teaspoon vanilla extract
  • 2 cups of seasonal fruits like 1 medium apple, 1 small ripe mango, 1 medium banana, 1/2 medium pomegranate
  • Add nuts to garnish

How to make vegan custard?

  • Take a microwave-safe bowl and add arrowroot powder and almond milk to form a smooth paste. Take another bowl and whisk together eggs, vanilla & sugar. Pour the egg mix into the arrowroot almond milk mix and heat in the microwave until it begins to thicken. Stir it occasionally to avoid lump formation.
  • Refrigerate the custard.

  • Rinse the fruits well and refrigerate them.
  • Just before serving the fruit custard, chop them into small pieces.
  • Add them to a serving bowl.
  • Now whisk the chilled custard to make it smooth.
  • Pour it over the fruits.
  • Garnish with some pomegranate seeds.

Precautions

  • Make sure to stir the custard mixture to prevent any lump formation and to give it a smooth texture.
  • Chill the custard and the fruits properly
  • Do not use cold milk to dissolve the custard powder. Milk should be warm.
  • Adding custard powder to boiling milk can also form clumps. So make sure to avoid it.
  • Always mix the fruits and custards only before serving.  Mixing them and refrigerating them together can cause fruits to release moisture that can make the custard runny.
