Healthy Arrowroot Coconut Drink Recipe

Arrowroot coconut milk is a South Indian refreshing drink that helps in relieving stomach upset and can treat diarrhea. Arrowroot milk also serves as an energy drink and helps in rejuvenating you after a strenuous workout.

  • 3 tsp arrowroot powder
  • 3/4th cup Sugar
  • 3 cups coconut milk
  • 3 cups water
  • 1 pod cardamom
  • 5-7 strands of saffron
  • Cashew
  • Raisins
  • Pinch of salt

How to make Arrowroot Milk?

  • Remove the shell of the cardamom seeds and crush them. Keep aside.
  • Take a thick bottom vessel. Add arrowroot powder to it. Add ½ cup water, sugar, a pinch of salt, and crushed cardamom. Mix well and strain it.
  • Add the coconut milk to the arrowroot mixture and mix well. You can also do so by pouring coconut paste through a sieve.
  • Now boil the arrowroot and coconut milk till it becomes thick.
  • Add few strands of saffron to give the liquid a beautiful orange color.
  • Switch off the flame. Take the milk in a glass.
  • Garnish with cashews and raisins.

Precautions

  • Mix the arrowroot powder and coconut milk properly so that no lumps are formed.
  • Coconut milk is added slowly through a sieve to remove any kind of impurities.
